Los tres golpes translated as the three hits is one the very own dominican breakfast . This dish is composed with fried eggs, fried salami, Mangu and sausage . Now I know some of you are asking what in the wold is mangu? mangu is simply mashed plantains and usually dominicans eat it with caramelized onions on top. This is a dish that can be served either at breakfast time, lunch or even dinner. There 's no specific time to eat this delicious dish really.  Make sure to have this dish when you visit , becuase it is truly a must have !. This week I decided to share this very simple recipe with all of you :

Serving for 4 people 

1/2 red onion, sliced thin
½ cup of water
3 Tablespoons red wine vinegar
2 teaspoons olive oil
 4 medium sweet plantains
2 table spoons of butter ( as much as you desire)
kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
1 ounce Dominican salami, cut into thin slices
12 ounce of friend cheese, cut into squares preferebly 
2 Tablespoons olive oil
8 large eggs
1. Set the sliced onion, the water, the vinegar and the oil in a medium skillet over medium high heat until the water completely boils away. Lower the hear to very low and gently sauté the onions for a few minutes. Season with salt and pepper and set aside.
2. Peel the plantains, cut into four pieces and set in salted water over high heat to bring to the boil. Lower heat and simmer until plantains can be easily pierced with a small knife, about 15 minutes. Drain the plantains, saving ½ cup of the cooking water, and using a hand mixer, blend them with the butter, adding cooking water to the plantains to reach desired consistency. 
3. Heat the vegetable oil in a medium skillet, and fry the cheese and salami slices until golden brown on both sides.
4. Wipe out the skillet and add the olive oil over medium high heat. Crack the eggs into the skillet, spooning hot oil from the pan over the eggs, until the egg whites edges are golden . Serve eggs with a scoop of mangu topped with onions, and the fried cheese and salami.
